So, we have discovered what happens when Dan gets several weeks of vacation with nothing to do. A couple of weeks ago he made and canned pickles (we will not find out how they taste until about Rosh Hashanah...but no mold is growing, and the water isn't cloudy, so the canning part worked). Today, Dan is making and canning tomato sauce. I got a deal from one of the farmers to buy 30 pounds of canning tomatoes for $10. I think Dan used about 25 pounds to make the sauce (much more and the stock pot would have been too full), maybe we'll make gazpacho with the rest.
